In the heart of Geneva, a passion for chocolate was born in Emile’s kitchen. While many saw chocolate as a simple indulgence, Emile saw a world of stories, aromas, and traditions waiting to be uncovered.
The Birth of Carrack Chocolat:
After a career in finance and tourism, Emile was drawn back to a childhood melody: chocolate. The purchase of his first grinder in 2021 marked the beginning of a new journey, turning his kitchen into a workshop and reviving the authentic art of chocolate making.
A Partnership Fueled by Passion:
Impressed by Emile’s dedication and the enchanting results, Alain, a longtime friend, joined the chocolate adventure. Combining Alain’s precision with Emile’s creativity, they crafted the perfect recipe, establishing the strong foundations of Carrack Chocolat.
The Story Behind the Name:
The name "Carrack" was thoughtfully chosen, inspired by the historic exploration ships that first brought cacao to Europe. It symbolizes Emile and Alain’s journey—a never-ending pursuit of refinement.

At Carrack, we don't just follow tradition—we reinvent it. The beauty of our chocolate lies in our commitment to every step of the "bean to bar" process, a journey that starts long before the cacao reaches our workshop.

Selection: Our quest begins with a meticulous selection of cacao beans, prioritizing quality, flavor, and origin.
Tailored Roasting: Once in our workshop, each batch of beans is roasted with precision, unlocking their most refined and complex aromas.
Cracking and Winnowing: The beans are carefully crushed to remove the shells and isolate the precious cacao nibs—an essential step in maintaining the purity of our chocolate.

Our specialized machines, often custom-built or tailored to our exact specifications, give us a distinct advantage.
